Ingredients
- 75g butter (at room temperature)
- 110g caster sugar
- 125g curd (plain yogurt works well)
- 4 tbsp lime juice
- 175g flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 tsp lemon zest
- 3-5 tbsp milk (as needed to achieve the right consistency)
- 75g fresh blueberries
- 25g dried blueberries
Method
- Preheat and Prepare – Preheat your oven to 180°C (350°F) and line a muffin tray with muffin cups or lightly grease it.
- Cream Butter and Sugar – In a large bowl, cream together the butter and caster sugar until light and fluffy. This should take about 5 minutes and is best done with an electric mixer.
- Add the Wet Ingredients – Add the curd to the butter-sugar mixture and mix until smooth and combined. Stir in the lime juice for an added tangy touch.
- Combine Dry Ingredients – In a separate bowl, sift together the flour, baking soda, and baking powder. Add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the muffins dense.
- Add the Lemon Zest and Blueberries – Gently fold in the lemon zest, fresh blueberries, and dried blueberries, being careful not to break up the berries too much.
- Adjust with Milk – Add milk, 1 tablespoon at a time, until the batter is smooth and has a pourable consistency (it should not be too thick or too runny).
- Bake – Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve – Allow the muffins to cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
